In 2006, Dr. Jonathan Carp was visiting Kyoto when a friend took him to a Buddhist-run vegetarian restaurant on the city’s outskirts. There, he encountered shirataki noodles — delicate strands made from the Japanese konjac plant, prepared using the same techniques Buddhist monks had perfected over fourteen centuries.
What fascinated Dr. Carp wasn’t merely the noodles’ heritage, but their extraordinary nutritional profile. Each serving contained just five calories and fewer than three grammes of carbohydrates. The noodles were 97 per cent water and three per cent plant fibre — essentially pure sustenance without the metabolic burden of traditional pasta.
Recognising the profound health implications for his patients, Dr. Carp founded Miracle Noodle, bringing this ancient food to Western wellness enthusiasts. Today, the product has garnered recognition from culinary personalities like Rachael Ray and Rocco DiSpirito, and has been featured in publications including Cosmopolitan and Men’s Health.
